Herb Salmon with Truffle Cream & Homemade Mango Salsa


Fresh salmon is tasty and can be simply coat with herbs and pan fry. It will turn out good all the time. Serving with truffle cream sauce and mango salsa makes the whole combination very tasty.

Serves 2

Ingredients:
2 fresh salmon fillet 1-1½ inch thick
2 tsp olive oil (to rub on fish)
2-3 tbsp olive oil (for pan fry)
1 tbsp butter
2 tsp oregano
2 tsp thyme
Pinch of salt and pepper


Preparation:
1. Clean and dry salmon, rub olive oil and salt on salmon. Sprinkle oregano, thyme and pepper on salmon and press lightly to coat.
2. Heat pan with olive oil and butter, mix oil and butter lightly with spatula when butter melts in pan. When heat, place salmon fillet in pan skin face down to sear for 2 min in medium high heat. Do not turn salmon fillet until skin is lightly brown.
3. Turn fillet and allow cooking for 1-2 min, depends on how well you want the salmon fillet to be cooked*.
Note*: Fish will continue to cook further with the remaining heat.


Home Made Mango Salsa
Mango salsa adds interesting taste to any grill fish or meat.


Ingredients:
1 big ripe mango, peeled and diced (about 1 ½ cup)
1/2 cup finely diced red onion
1 red jalapeño pepper, finely chopped (spiciness as desired)
¾ cup red, yellow and orange bell pepper diced
3 tbsp chopped fresh cilantro
2 tbsp limejuice
Pinch of salt and pepper to taste


Preparation:
1. In a medium size bowl, stir together all ingredients.
2. Chill over night or for one hour in the refrigerator before serving.
