Baked Cheesy Zucchini


Zucchini, the small the tastier it is! Simply grill it with pepper & salt is always taste good. In this recipe, we baked it with cheese!

Serves 2-4

Ingredients:
2 zucchini cut halves into lengthwise, and remain skin.
Olive oil
1 egg beaten
¾ cup finely grated Parmesan
1 tbsp oregano
Dash of paprika
Pinch of coarse salt
Pinch of ground black pepper


Preparation:
1. Preheat oven to 375F. Brush baking pan with oil; set aside. Use a small spoon to
scrape out center of zucchini meat and retaining the zucchini shell with skin.

2. In a bowl, whisk egg and add zucchini meat, Parmesan, oregano, salt and
pepper.

3. Scope mixtures into 4 halves of zucchini shell, sprinkle with paprika and bake for 20-25
min or until cook and cheese are lightly brown. Remove zucchini from oven and
serve warm.

Enjoy a delicious cheesy side dish that accompany well with any other meat or seafood entrée!
